Captain Solo’s Sweet Pepper “Salsa”

“Easy? You call that Easy” Yes!

To get an extra serving (or three) of vitamin-packed veggies with your protein, why not try this easy-to-make and gorgeous-to-behold melange of sweet peppers, onions and whatever else you have on hand? Get creative!

Ingredients

6 sweet mini peppers, various colors (or 1/2 each yellow, red and orange bell peppers), roughly chopped

1/4 sweet onion, chopped

12 mini tomatoes, halved (I like mini- heirlooms but cherry tomatoes or similar work just fine)

3 Tablespoons chopped cilantro or parsley

1-2 teaspoons fresh-squeezed lemon juice

1 medium avocado, cubed (this is optional but, oh my!)

Add in anything else that looks good: chives, olives, apple, you name it!

Directions

This is the easy part: Throw everything into a pretty bowl and toss around for a minute, spoon lavishly onto fish or chicken breasts just before serving or eat straight out of the bowl!
